The building was originally constructed in 1907 as a fruit and vegetable canning plant for the California Fruit Packers Association (a consortium of 18 Pacific coast canning companies), which the Del Monte Company eventually made into the largest peach canning facility in the world. In the early 1960s, the building, no longer in use, was slated for demolition when it was rescued and re-developed by a local private entrepreneur. It opened in 1967 as the Cannery, and is today widely recognized as one of the country's first and most innovative historic building re-use projects.
